If you're missing the Thai sweet and spicy taste, I think you would love this recipe.
Ingredients:
1 cup cooked rice
4 pcs chicken breast, sliced into cubes (marinated with salt and pepper)
1 red bell pepper, sliced
2 stalks scallions (green onion), minced
1 Egg
½ cup all purpose flour
Salt and Pepper
Chili Flakes
1 cup Sweet Chili Sauce
½ tbsp hot sauce
1 cup cooking oil
2 stalks spring onions, minced (optional)
To Prepare:
1. On a bowl, add All Purpose Flour and season it with salt and pepper. Mix thoroughly.
2 Coat the chicken evenly until well coated.
3. On a separate bowl, beat the eggs and season with salt and pepper. Mix the coated chicken until well blended.
To Cook:
1. Heat the pan, add oil and wait for a few minutes until oil is hot.
2. Fry the chicken until brown on each side. (Put them one by one so they don’t stick with each other). And remember not to crowd your pan so the chicken gets evenly cooked. Set aside and leave only a tbsp of the oil in the pan.
3. On the same pan, saute red bell pepper and chili flakes for a minute.
3. Add the chicken, sweet chili sauce and hot sauce. Mix them together until well blended.
4. Add salt and pepper to taste.
5. Serve it on top of hot rice and top it with spring onions.
